Adept Watershaper would fit best in a white-based aggressive or go-wide deck that frequently attacks with multiple creatures, since attacking creatures become tapped and would gain indestructible, making combat much safer and allowing you to pressure opponents through blockers and survive damage-based board wipes; it could also have niche use in token strategies or tap-synergy builds that tap creatures for convoke or activated abilities. However, at three mana in white, there are generally stronger and more flexible protection options such as **Selfless Spirit**, **Dauntless Bodyguard**, **Guardian of Faith**, or especially **Unbreakable Formation** and **Teferi’s Protection**, which protect your entire board (tapped or not) at instant speed and are harder to play around.
